The Bees Knees

  • 2 oz. Bluecoat American Dry Gin
  • 1/2 oz. Fresh Lemon Juice
  • 3/4 oz. Honey Syrup
Honey Syrup is easily made by combining equal parts honey with equal parts boiling water. Stir to dissolve honey and cool completely. Add all ingredients in a shaker and shake well. Serve over fresh ice or in a martini glass. Garnsh with a lemon wheel, wedge or twist.

On the nose, the juniper is restrained, relegated to the background while notes of cedar wood, butterscotch, and honeysuckle take over. There’s also a sharp, acidic edge to the aroma, something that’s tough to identify but can be described best as a lingering floral character that’s mingled with crushed red berries. The body is more juniper-forward than all that would imply, but there’s a lot more going on here as well than simple botanical notes and wood. On the palate you get a rush of evergreen that is chased by a wild collection of notes that include forest floor, orange peel, cream soda. There’s a whole lot going on, but finding a balance in all of this is elusive to the point where the spirit ultimately becomes confusing.

In an old-school classic gin Aviation cocktail. It's blue as the sky. Mix it 2 oz Gin, 0,5 Maraschino liquer, 0,25 oz Crème de violette or Crème Yvette, 0,75 oz Lemon juice.
Signature drink
Barrel Aged Negroni
  • 1 oz Bluecoat Barrel Finished Gin
  • 1 oz Sweet Vermouth
  • 1 oz choice of Campari or Aperol
Add ingredients into mixing glass filled with ice, and stir to chill ingredients. Pour into a Rocks flass with fresh ice. Garnish with an expressed orange zest.
